Leading the kitchen is Culinary Director Dipesh Shinde, a native of Mumbai with a storied career in some of India’s most renowned restaurants, including Punjab Delhi and Farzi Cafe. A central feature of Kebab aur Sharab is the custom-crafted clay tandoor oven, which produces made-to-order specialty roti and naan, including the elusive rumali roti—an extremely thin bread served folded like a handkerchief, hence its nickname “handkerchief bread.” In addition to these unique bread offerings, the restaurant boasts a myriad of meat dishes, prepared using a dazzling array of traditional techniques, from the tandoor to stone grilling.
