Kebab aur Sharab showcases the depth and breadth of India’s remarkable cuisine, drawing inspiration from the iconic street carts and beloved eateries that Chef Mehta grew up with. The menu features an array of dishes that reflect the diverse culinary landscape of India, from the bustling streets of Mumbai to the historic lanes of Delhi.
Leading the kitchen is Culinary Director Dipesh Shinde, a native of Mumbai with a storied career in some of India’s most renowned restaurants, including Punjab Delhi and Farzi Cafe. Shinde, who hails from a family of chefs, brings generations of expertise and a mastery of numerous Indian cooking techniques to Kebab aur Sharab. His dedication to culinary excellence ensures that every dish is crafted with precision and passion.
A central feature of Kebab aur Sharab is the custom-crafted clay tandoor oven, which produces made-to-order specialty roti and naan, including the elusive rumali roti—an extremely thin bread served folded like a handkerchief, hence its nickname “handkerchief bread.” In addition to these unique bread offerings, the restaurant boasts a myriad of meat dishes, prepared using a dazzling array of traditional techniques, from the tandoor to stone grilling.
