Curd Rice, also known as Thayir Sadam, is a popular South Indian comfort food made with cooked rice, curd (yogurt), and a simple tempering. It’s light, cooling, and incredibly refreshing, making it a perfect dish for summers or as a side in festive meals. Here’s how to prepare it effortlessly.


Ingredients

For the Rice Base:

  • 1 cup rice – cooked and cooled
  • 1 cup curd (yogurt) – thick and fresh
  • 1/2 cup milk – optional, to adjust consistency
  • Salt – to taste

For the Tempering:

  • 1 tablespoon oil or ghee
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 dried red chili
  • 1 sprig curry leaves
  • 1/2 teaspoon grated ginger
  • 1 green chili – finely chopped
  • 1 pinch asafoetida (hing)
  • 1 tablespoon urad dal (optional)
  • 1 tablespoon chana dal (optional)

Garnish:

  • 2 tablespoons coriander leaves – finely chopped
  • 1 tablespoon pomegranate seeds – optional, for a sweet crunch
  • 1 tablespoon grated carrot – optional

Instructions

Step 1: Cook and Cool the Rice

  1. Wash 1 cup of rice thoroughly and cook it with 2 cups of water until soft.
  2. Mash the rice slightly with the back of a spoon while it’s warm.
  3. Allow the rice to cool completely before mixing it with curd.

Step 2: Mix Rice and Curd

  1. In a mixing bowl, combine the cooled rice with curd and milk (if using).
  2. Add salt to taste and mix until the rice is creamy and well-coated.

Step 3: Prepare the Tempering

  1. Heat oil or ghee in a small pan.
  2. Add mustard seeds and let them splutter.
  3. Add cumin seeds, urad dal, and chana dal. Sauté until the dals turn golden brown.
  4. Add dried red chili, curry leaves, grated ginger, green chili, and a pinch of asafoetida. Sauté for a few seconds until fragrant.

Step 4: Assemble the Curd Rice

  1. Pour the tempering over the curd rice mixture and mix well.
  2. Garnish with chopped coriander leaves, pomegranate seeds, and grated carrot if desired.

Serving Suggestions

Serve Curd Rice chilled or at room temperature with a side of pickle, papad, or fried green chilies for a complete meal.
