Vegetable Keema, also known as Veg Kheema, is a delightful vegetarian twist on the traditional minced meat dish, offering a medley of finely chopped vegetables cooked with aromatic spices. This nutritious and flavorful recipe is perfect for those seeking a plant-based alternative without compromising on taste.

​What is Vegetable Keema?

The term ‘Keema’ or ‘Kheema’ originates from the Hindi word for ‘mince.’ Traditionally, it refers to a dish made from minced meat. However, in this vegetarian version, assorted vegetables are minced or finely chopped to replicate the texture and appearance of the original dish. This adaptation not only caters to vegetarians but also adds a rich array of nutrients to the meal.

Ingredients for Veg Keema

To prepare this savory dish, you’ll need:

Vegetables:

  • 7-8 cauliflower florets, grated or finely chopped​
  • 7-8 French beans, finely chopped​
  • 1 medium-sized carrot, grated or chopped​
  • 7-8 button mushrooms, finely chopped​
  • 1/3 cup green peas (fresh or frozen)

Base Ingredients:

  • 2 medium-sized tomatoes, finely chopped (approximately 1 cup)​
  • 1 medium-sized onion, finely chopped (about 1/2 cup)
  • 1 green chili, finely chopped​

  • 1 teaspoon ginger-garlic paste​
  • 1/2 teaspoon turmeric powder​
  • 1 teaspoon coriander powder​
  • 1 teaspoon cumin powder​
  • 1/2 teaspoon garam masala​

  • Fresh coriander leaves, chopped (for garnish)

Other Ingredients:

  • 1/2 cup water (adjust as needed)
  • 2 tablespoons oil​

Step-by-Step Preparation

  1. Prepare the Vegetables: Grate or finely chop the cauliflower, carrot, mushrooms, and French beans. Keep the green peas ready.
  2. Sauté Onions and Spices: Heat oil in a pan over medium heat. Add finely chopped onions and sauté until they turn translucent. Incorporate the ginger-garlic paste and chopped green chili; sauté for another minute until the raw aroma dissipates.​
  3. Add Tomatoes and Ground Spices: Introduce the finely chopped tomatoes to the pan. Cook until they soften and the oil starts to separate. Add turmeric powder, coriander powder, cumin powder, and salt. Mix well and cook for 2-3 minutes to allow the spices to blend.​
  4. Incorporate Vegetables: Add the grated or chopped vegetables and green peas to the pan. Stir thoroughly to ensure the spices coat the vegetables evenly.​
  5. Cook the Mixture: Pour in water and mix well. Cover the pan and let the vegetables cook on medium heat for about 10-12 minutes, or until they become tender. Stir occasionally to prevent sticking.​
  6. Finish with Garam Masala and Garnish: Once the vegetables are cooked and the mixture reaches a semi-dry consistency, sprinkle garam masala over the top. Stir to combine. Garnish with freshly chopped coriander leaves before serving.​

Serving Suggestions

Vegetable Keema pairs excellently with Indian breads such as chapati, paratha, naan, or pav (Indian dinner rolls). It can also be served alongside steamed rice or used as a filling for sandwiches and wraps. For a complete meal, accompany it with a side of raita or a fresh salad.​

  • Choice of Vegetables: While the recipe includes cauliflower, carrots, beans, peas, and mushrooms, feel free to experiment with other vegetables like bell peppers or potatoes. Ensure that the vegetables are finely chopped to achieve the desired texture.​
  • Protein Addition: To enhance the protein content, consider adding crumbled paneer or tofu.​
  • Spice Level: Adjust the quantity of green chilies and garam masala to suit your preferred spice level.​
