Brinjal curry, also known as eggplant curry, is a flavorful and aromatic dish popular in many cuisines. This hearty and delicious recipe pairs well with rice, roti, or naan, making it a perfect addition to any meal.

Ingredients

  • 4-5 medium-sized brinjals (chopped)
  • 2 onions (finely chopped)
  • 2 tomatoes (chopped)
  • 2 garlic cloves (minced)
  • 1-inch ginger (grated)
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Water as needed

Instructions

  1. Prepare the Brinjals:
    • Wash and chop the brinjals into small pieces.
    • Soak them in salted water to prevent discoloration.
  2. Temper the Spices:
    • Heat oil in a pan.
    • Add mustard seeds and cumin seeds. Let them splutter.
  3. Sauté Onions and Spices:
    • Add chopped onions, garlic, and ginger. Sauté until golden brown.
    • Add turmeric powder, red chili powder, and coriander powder. Stir well.
  4. Cook Tomatoes:
    • Add chopped tomatoes and cook until they turn soft and mushy.
  5. Add Brinjals:
    • Drain the brinjals and add them to the pan.
    • Mix well and cook for 5-7 minutes.
  6. Simmer the Curry:
    • Add water as needed, cover, and cook until the brinjals become soft and fully cooked.
    • Add garam masala and adjust salt.
  7. Garnish and Serve:
    • Garnish with fresh coriander leaves.
    • Serve hot with rice or roti.

  • Use small brinjals for better flavor.
  • Add a dash of lemon juice for a tangy twist.
  • Adjust spices according to your taste preferences.
