What is Phirni?

Phirni (also spelled Firni) is a traditional North Indian dessert made with coarsely ground rice, simmered in full-fat milk, sweetened with sugar, and enriched with aromatic flavors like cardamom, saffron, or rose water. Unlike rice kheer which uses whole grains, phirni uses ground rice, giving it a smooth, creamy texture that thickens beautifully as it cools.

Traditionally served in clay bowls known as matkas or shikoras, phirni absorbs an earthy aroma from the vessel, enhancing its richness. It’s often topped with slivers of almonds and pistachios and served chilled, making it ideal for festive summer occasions like Raksha Bandhan.

  • Cardamom powder – from 6 to 7 green cardamoms
  • Rose water – 2 tsp (optional)
  • Almonds & Pistachios – 10 to 12 each, blanched and sliced

How to Make Phirni Step-by-Step

1️⃣ Prep the Rice

  • Rinse ¼ cup basmati rice in water 2–3 times.
  • Drain and let the grains dry completely. Once dried, grind the rice to a coarse texture resembling fine semolina (not a fine powder).

2️⃣ Infuse the Milk

  • Heat 1 liter of full-fat milk in a heavy pan.
  • In a small bowl, soak saffron strands in 1 tbsp warm milk and set aside.

3️⃣ Cook the Phirni

  • Once the milk comes to a boil, add the ground rice gradually, stirring continuously to avoid lumps.
  • Stir in the sugar and simmer on low heat, scraping down the sides and incorporating the cream layer into the mix.
  • After about 20–25 minutes, once the rice is soft and the mixture thickens, add cardamom powder, saffron-infused milk, and chopped nuts.

4️⃣ Add Fragrance

  • Stir in rose water (or kewra water) for a beautiful floral aroma.

5️⃣ Chill & Serve

  • Pour into matkas or small serving bowls.
  • Let them cool to room temperature. Cover with foil and refrigerate for at least 4 hours.

Garnishing Ideas

  • Sprinkle more chopped almonds, pistachios, or even dried rose petals.
  • Add a small dot of silver leaf (chandi ka vark) for a festive touch.

  • Mango Phirni: Stir in mango puree after cooking and cooling.
  • Apple Phirni: Add grated apple cooked with a bit of sugar and cinnamon.
  • Jaggery Phirni: Swap sugar for jaggery for a rustic twist. Add it after cooling the phirni slightly to avoid curdling.

Vegan Option

Substitute whole milk with almond or coconut milk. Cook the ground rice in water until soft, then add the plant-based milk and sweetener of your choice.
