A Creamy Delight for Your Sweet Cravings

Rice kheer is one of India’s most beloved desserts—a luscious, creamy pudding made with just a handful of ingredients. Perfect for festive occasions or when you’re simply in the mood for something indulgent, this dessert strikes the right balance of sweetness and richness.

Why Make Rice Kheer?

  1. Comfort Food: A warm bowl of kheer feels like a hug in dessert form.
  2. Easy to Prepare: Made with pantry staples like rice, milk, and sugar.
  3. Customizable: Add your favorite dry fruits, nuts, or even saffron for extra flavor.

Ingredients You’ll Need

  • 1/2 cup Basmati rice (or any fragrant rice)
  • 1 liter Full-fat milk
  • 1/4 cup Sugar (adjust to taste)
  • 1/4 tsp Cardamom powder
  • 10–12 Almonds, chopped
  • 10–12 Cashews, chopped
  • 10–12 Raisins
  • A few strands of Saffron (optional)
  • 1 tbsp Ghee (optional, for added richness)

Step-by-Step Recipe

Step 1: Prep the Ingredients

  1. Wash the rice thoroughly under running water. Soak it for 20–30 minutes. Drain and set aside.
  2. Soak saffron strands in 2 tablespoons of warm milk for a rich golden color.

Step 2: Cook the Rice in Milk

  1. In a heavy-bottomed pan, bring the milk to a boil. Reduce the heat to low and let it simmer.
  2. Add the drained rice to the milk and stir well to prevent it from sticking to the bottom.
  3. Cook the rice on low heat, stirring occasionally, until it becomes soft and the milk thickens (approximately 25–30 minutes).

Step 3: Sweeten and Flavor

  1. Once the rice is cooked and the mixture is creamy, add sugar. Stir well to dissolve it completely.
  2. Add cardamom powder for that signature kheer aroma.

Step 4: Enhance with Nuts and Saffron

  1. In a small pan, heat ghee and lightly fry the almonds, cashews, and raisins until golden. Add them to the kheer.
  2. Stir in the saffron milk for a luxurious touch.

Step 5: Serve and Enjoy

  1. Let the kheer cool slightly before serving. You can enjoy it warm or chilled, depending on your preference.

Tips for the Perfect Rice Kheer

  • Patience is Key: Slow cooking is essential to achieve the creamy texture.
  • Choose the Right Rice: Basmati rice adds a fragrant touch, but any short-grain rice works well.
  • Adjust Sweetness: Add sugar gradually and taste as you go.
  • Experiment with Toppings: Add pistachios, rose water, or even shredded coconut for variations.

Rice kheer is a timeless classic that never fails to impress. Whether you’re celebrating a festival, hosting a dinner, or simply treating yourself, this rich and creamy dessert is always a crowd-pleaser.

So, grab your ingredients and let the aroma of kheer fill your kitchen. Happy cooking!
