Rice kheer is one of India’s most beloved desserts—a luscious, creamy pudding made with just a handful of ingredients. Perfect for festive occasions or when you’re simply in the mood for something indulgent, this dessert strikes the right balance of sweetness and richness.

Step-by-Step Recipe

Step 1: Prep the Ingredients

  1. Wash the rice thoroughly under running water. Soak it for 20–30 minutes. Drain and set aside.
  2. Soak saffron strands in 2 tablespoons of warm milk for a rich golden color.

Step 2: Cook the Rice in Milk

  1. In a heavy-bottomed pan, bring the milk to a boil. Reduce the heat to low and let it simmer.
  2. Add the drained rice to the milk and stir well to prevent it from sticking to the bottom.
  3. Cook the rice on low heat, stirring occasionally, until it becomes soft and the milk thickens (approximately 25–30 minutes).

Step 3: Sweeten and Flavor

  1. Once the rice is cooked and the mixture is creamy, add sugar. Stir well to dissolve it completely.
  2. Add cardamom powder for that signature kheer aroma.

Step 4: Enhance with Nuts and Saffron

  1. In a small pan, heat ghee and lightly fry the almonds, cashews, and raisins until golden. Add them to the kheer.
  2. Stir in the saffron milk for a luxurious touch.

Step 5: Serve and Enjoy

  1. Let the kheer cool slightly before serving. You can enjoy it warm or chilled, depending on your preference.
