Prepared during religious fasts like Navratri, Ekadashi, Janmashtami, and Maha Shivratri, this dish is not only delicious but also packed with nutrition and easy to digest.

    Samvat rice, also known as barnyard millet, is a pseudo-cereal that is gluten-free and highly suitable for people with gluten intolerance or celiac disease. Its light, non-starchy nature makes it ideal for fasting days when grains like rice and wheat are avoided.

    How to Make Samvat Rice Khichdi – Step-by-Step Instructions:

    1. Rinse and Soak: Wash the sama rice thoroughly and soak it in water for 20-30 minutes. Drain before cooking.
    2. Heat Ghee: In a thick-bottomed pan or kadai, heat ghee or oil. Add cumin seeds and let them splutter.
    3. Sauté Veggies: Add diced potatoes and chopped green chilies. Sauté for 2-3 minutes till the potatoes soften slightly.
    4. Add Samvat Rice: Stir in the soaked and drained samvat rice. Mix well.
    5. Add Water & Salt: Pour water and season with sendha namak. Stir and bring to a boil.
    6. Simmer: Cover and cook on low to medium flame until the rice and potatoes are soft and cooked through. Stir occasionally.
    7. Serve Hot: Drizzle with extra ghee before serving. Pair with plain curd or vrat-friendly raita.
