Ingredients You Need:

  • 1 medium eggplant (about 550 grams)
  • 3 large garlic cloves (for roasting)
  • 1.5 tablespoons oil (vegetable oil works well)
  • 4 large garlic cloves (chopped)
  • 1-inch piece of ginger (chopped)
  • 1 green chili (or more to taste, chopped)
  • 1 medium onion (chopped)
  • 2 medium tomatoes (chopped)
  • 1/2 teaspoon red chili powder (or to taste)
  • 1 teaspoon coriander powder
  • 3/4 teaspoon salt (or to taste)
  • 2 tablespoons chopped cilantro (for garnish)

How to Make Baingan Bharta:

  1. Roasting the Eggplant:
    • Start by rinsing the eggplant and patting it dry. Brush the eggplant with a little oil and make a few slits on its skin with a knife. Place a garlic clove inside each slit.
    • Roast the eggplant directly on an open flame, turning it occasionally, for 10-12 minutes. You will know it’s done when a knife easily slides into the flesh. Once roasted, wrap it in aluminum foil to cool down.
  2. Prepare the Masala (Spicy Mixture):
    • In the meantime, chop the garlic (not the ones used for roasting), ginger, and green chili.
    • Heat oil in a pan over medium heat. Add the chopped garlic, ginger, and green chili, sautéing for about 2 minutes until they turn golden.
  3. Cook the Vegetables:
    • Add the chopped onion to the pan and cook for 2-3 minutes, allowing it to soften without browning.
    • Add the chopped tomatoes and cook for about 5 minutes until the tomatoes become soft and oil starts to separate from the masala.
  4. Mash and Mix:
    • Once the eggplant has cooled, peel off the skin and mash the flesh with a fork or potato masher.
    • Add the mashed eggplant to the pan along with the roasted garlic, and mix well.
  5. Spice It Up:
    • Add red chili powder, coriander powder, and salt to taste. Stir everything together and let it cook on medium-low heat for another 5 minutes.
  6. Final Touch:
    • Stir in the chopped cilantro and give everything a final mix.
