Step 1: Prepare Kadai Masala
- In a dry pan, roast coriander seeds and Kashmiri red chilies on low heat until fragrant.
- Cool the roasted spices and grind them into a semi-fine powder using a grinder or mortar and pestle. Set aside.
Step 2: Cook the Base
- Heat oil in a kadai or deep pan. Add chopped onions and sauté until they turn translucent.
- Add ginger-garlic paste and cook for a minute until the raw smell disappears.
- Stir in the chopped tomatoes and cook until the mixture turns soft and starts releasing oil.
Step 3: Add Spices and Vegetables
- Mix the prepared kadai masala into the tomato mixture. Cook for 2–3 minutes to enhance the flavors.
- Add capsicum slices and sauté for 3–4 minutes. The capsicum should remain slightly crunchy.

- Add turmeric, garam masala, and salt. Mix well.
- Gently fold in the paneer cubes, ensuring they are coated evenly with the masala.
- Sprinkle crushed kasuri methi and garnish with fresh coriander leaves.
