Step-by-Step Method

  1. Boil the Milk: In a heavy-bottomed pan, simmer the milk on low heat until it reduces to almost half, stirring frequently to avoid burning.
  2. Sweeten & Flavor: Add the condensed milk, sugar, and cardamom powder. Mix well and continue cooking until the mixture thickens slightly.
  3. Cool and Add Mango: Turn off the heat and let the mixture cool completely. Then stir in the mango puree and mix until smooth.
  4. Pour into Moulds: Pour the kulfi mixture into kulfi moulds, popsicle moulds, or small bowls. Cover with foil and insert sticks if using.
  5. Freeze: Freeze for 6–8 hours or until completely set.
  6. Serve: To unmould, dip the moulds in warm water for a few seconds and gently pull out. Garnish with chopped nuts if desired.

  • Always use sweet, non-fibrous mangoes like Alphonso or Kesar.
  • You can skip condensed milk and use khoya or mawa for a richer version.
  • Want to go vegan? Use coconut milk and skip condensed milk.
