How to Make Quinoa Paneer Patties – Step-by-Step

Step 1: Cook the Quinoa

  • Pressure cook ½ cup of quinoa with ¾ cup water and a pinch of salt.
  • Cook for 2 whistles, allow to cool, then drain and keep aside.

Step 2: Prepare the Sweet Potato

  • Cut 1 medium sweet potato into large chunks.
  • Pressure cook until soft, let it cool, then peel and mash. Set aside.

Step 3: Make Bread Crumbs

  • Toast 2–3 slices of bread until crisp.
  • Grind into a fine powder and keep aside.

Step 4: Sauté the Vegetables

  • Heat ½ tablespoon oil in a pan.
  • Add chopped garlic and sauté for a few seconds.
  • Add finely chopped French beans and carrots with a pinch of salt.
  • Sauté for about 1½ minutes until slightly tender.

Step 5: Add Paneer and Sweet Potato

  • Add the mashed sweet potato and crumbled paneer to the pan.
  • Sprinkle salt and cook for 1 minute, stirring well.

Step 6: Mix in Quinoa and Seasonings

  • Add the cooked quinoa to the mixture.
  • Season with oregano, black pepper, and more salt if needed.
  • Cook for another minute and turn off the heat.
