    Dal Baati Churma is a traditional Rajasthani dish that combines the hearty flavors of lentils (dal), crispy baked wheat dumplings (baati), and a sweet, crumbled delight (churma). This iconic trio is not just a meal; it’s an experience that fills your home with warmth and aroma. Here’s how you can prepare this delicious meal at home in simple steps.

    Ingredients

    For Dal:

    • ¼ cup chana dal (split Bengal gram)
    • ¼ cup toor dal (pigeon peas)
    • ¼ cup moong dal (yellow lentils)
    • 1 tbsp urad dal (black gram)
    • 1 medium onion, finely chopped
    • 1 medium tomato, roughly chopped
    • 1 tsp garlic, finely chopped
    • 2 tsp red chili powder
    • 1 tsp coriander powder
    • ½ tsp turmeric powder
    • ½ tsp garam masala
    • 2 tsp coriander leaves, finely chopped
    • 1 tbsp ghee (clarified butter)

    For Tempering:

    • 2 cloves
    • 1 bay leaf
    • 2 tsp cumin seeds
    • 1 green chili, slit
    • A pinch of asafoetida (hing)

    For Baati:

    • 1 cup whole wheat flour
    • ¼ cup semolina (rava)
    • 2 tbsp besan (gram flour)
    • 3 tbsp melted ghee
    • ½ cup milk
    • ¼ tsp carom seeds (ajwain)
    • Salt to taste

    For Churma:

    • 1 cup whole wheat flour
    • ¼ cup semolina (rava)
    • 4 tsp melted ghee
    • 2 tbsp powdered sugar
    • ¼ tsp cardamom powder
    • 2 tbsp almond slivers
    • Ghee or oil for deep frying

    For Serving:

    • Lemon juice
    • Chopped raw onions
    • Additional ghee

    How to Make Dal Baati Churma

    Step 1: Prepare the Dal

    1. Rinse all dals thoroughly and pressure cook them with a pinch of turmeric, salt, and 3 cups of water for 4–5 whistles. Once done, mash them lightly.
    2. Heat ghee in a pan. Add cloves, bay leaf, cumin seeds, green chili, and hing. Let it splutter.
    3. Add onions and garlic; sauté until onions turn golden. Then add tomatoes, chili powder, turmeric, coriander powder, and garam masala. Cook until the tomatoes soften.
    4. Add the mashed dal, mix well, and let it simmer for 5 minutes. Adjust the consistency with water if needed. Garnish with coriander leaves.

    Step 2: Make the Baati

    1. Mix all the ingredients for baati and knead a stiff dough.
    2. Divide into small balls and flatten slightly, pressing your thumb to make an indentation in the center.
    3. Bake in a preheated oven at 180°C for 25–30 minutes or until golden. Alternatively, deep fry in ghee for a richer flavor. Brush with ghee while still hot.

    Step 3: Prepare the Churma

    1. Combine wheat flour, semolina, and ghee. Add water to make a stiff dough.
    2. Shape into small patties with an indentation in the center. Deep fry in hot ghee until golden brown.
    3. Once cooled, crush the fried patties into coarse crumbs using a blender or hand.
    4. Mix with powdered sugar, cardamom powder, and almond slivers. Add a spoonful of melted ghee for extra richness.

    Step 4: Assemble and Serve

    1. Break the baatis into smaller pieces and place them on a plate. Pour hot dal over them.
    2. Drizzle with ghee, sprinkle chopped onions, and squeeze some lemon juice on top.
    3. Serve alongside the sweet churma for a perfect balance of flavors.

    Tips for Perfect Dal Baati Churma

    • Use generous amounts of ghee; it’s what makes this dish special.
    • Baatis can be baked or fried, depending on your preference.
    • Churma can be prepared a day in advance for convenience.
    • Enjoy the dish piping hot for the best taste.
