1. Ukadiche Modak – The Sacred Steamed Dumpling

Ingredients:

  • Freshly grated coconut
  • Grated or powdered jaggery
  • Cardamom powder & nutmeg (optional)
  • Ghee (for sautéing)
  • Fine rice flour
  • Water & salt

Recipe:

  1. Prepare Filling – Sauté coconut in ghee, add jaggery, cardamom, and nutmeg. Cook until thick.
  2. Make Dough – Boil water with salt and ghee, stir in rice flour, cover, steam, then knead until smooth.
  3. Shape Modak – Form a disc, add filling, pleat edges, and seal into a cone.
  4. Steam – Place on banana leaf or parchment, steam for 10–14 mins, brush with ghee before serving.

2. Chocolate Modak Recipe – A Modern Festive Delight

Ingredients:

  • 1 cup mawa (khoya)
  • ⅓ cup chocolate chips
  • 2 tbsp sugar
  • ⅛ tsp cardamom powder (optional)
  • Ghee for greasing molds

Recipe:

  1. Grease modak molds.
  2. Heat mawa in a pan, stir for 2 mins.
  3. Add sugar, mix, then add chocolate chips.
  4. Blend well until mixture leaves pan sides.
  5. Fill molds and shape. Garnish with nuts or rose petals.

3. Fried Modak – Golden & Crispy Indulgence

Ingredients:
Outer Crust:

  • 2 cups wheat flour
  • Salt, warm oil, water

Filling:

  • 1.5 cups jaggery
  • 1.5 cups coconut
  • Sesame seeds
  • Cardamom & nutmeg powder

Recipe:

  1. Knead wheat flour with salt and warm oil. Rest 30 mins.
  2. Cook coconut, jaggery, sesame seeds, and spices until thick. Cool.
  3. Roll dough discs, fill with mixture, seal into modak shapes.
  4. Fry on medium flame until golden brown.

4. Satori – Maharashtrian Mawa Flatbread

Ingredients:
Filling:

  • 2 cups khoya (mawa)
  • Poppy seeds, dry dates powder, caster sugar, ghee

Outer Cover:

  • 1.5 cups maida
  • ½ cup sooji
  • 2 tbsp besan
  • Hot ghee

Recipe:

  1. Prepare dough with maida, sooji, besan, and hot ghee. Rest.
  2. Roast khoya in ghee, mix with roasted poppy seeds, dates powder, sugar.
  3. Stuff dough balls with filling, roll thick, fry until golden.

5. Apple Rabri – Fruity Twist to a Classic

Ingredients:

  • 1 liter full-fat milk
  • 2 grated apples
  • Sugar or jaggery
  • Cardamom powder, saffron milk, chopped nuts

Recipe:

  1. Boil milk, simmer until reduced by half.
  2. Add sugar/jaggery, saffron, and cardamom.
  3. Cool until lukewarm, fold in apples.
  4. Chill and garnish with nuts before serving.

6. Coconut Ladoo – Three Ways of Pure Bliss

Version 1 (Condensed Milk):

  • Coconut, condensed milk, ghee, cardamom.

Version 2 (Desiccated Coconut):

  • Desiccated coconut, condensed milk, cardamom.

Version 3 (Sugar Syrup):

  • Coconut, sugar, water, cardamom.

Recipe (Condensed Milk):

  1. Roast coconut in ghee.
  2. Add condensed milk & cardamom.
  3. Cook until thick, shape laddoos, roll in coconut.
