Bhindi Masala is a delicious and healthy Indian dish made with tender okra (ladyfinger) cooked in a blend of onions, tomatoes, and aromatic spices. This semi-dry curry is perfect for pairing with roti, paratha, or rice. Follow this simple recipe to make a flavorful Bhindi Masala at home.

Ingredients

For the Bhindi (Okra):

  • 250 grams okra (bhindi) – washed, dried, and chopped into 1-inch pieces
  • 2 tablespoons oil

For the Masala:

  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 medium onion – finely chopped
  • 2 medium tomatoes – finely chopped
  • 2 green chilies – slit
  • 1 teaspoon ginger-garlic paste

Spices:

  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon dry mango powder (amchur)
  • Salt – to taste

Garnish:

  • Fresh coriander leaves – finely chopped

Instructions

Step 1: Prepare the Bhindi

  1. Heat 2 tablespoons of oil in a pan.
  2. Add the chopped bhindi and sauté on medium heat for 8-10 minutes until lightly crisp and cooked through. Stir occasionally to avoid sticking.
  3. Remove the sautéed bhindi from the pan and set aside.

Step 2: Make the Masala Base

  1. In the same pan, heat 2 tablespoons of oil.
  2. Add cumin seeds and let them splutter.
  3. Add the chopped onions and sauté until golden brown.
  4. Stir in the ginger-garlic paste and cook for 1-2 minutes until the raw aroma disappears.
  5. Add the chopped tomatoes and green chilies. Cook until the tomatoes become soft and the oil starts to separate.

Step 3: Add Spices

  1. Lower the heat and add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for 1-2 minutes.

Step 4: Combine Bhindi with Masala

  1. Add the sautéed bhindi to the masala and mix gently to coat it with the spices.
  2. Sprinkle garam masala and dry mango powder (amchur) over the curry. Mix well.
  3. Cook for another 2-3 minutes on low heat to blend the flavors.

Step 5: Garnish and Serve

  1. Turn off the heat and garnish with fresh coriander leaves.
  2. Serve hot with roti, paratha, or steamed rice.

Tips for Perfect Bhindi Masala

  1. Ensure the Bhindi is Dry: Wash and pat dry the okra thoroughly to prevent it from becoming slimy.
  2. Cook Separately: Sautéing the bhindi before adding it to the masala ensures it stays crisp and flavorful.
  3. Avoid Over-Stirring: Gentle mixing helps maintain the shape and texture of the bhindi.
