Gujarati Dhokla is a popular snack known for its soft, fluffy texture and savory flavors. Often served with a side of tangy green chutney or tamarind chutney, it makes a delicious breakfast or snack option for all ages. In this detailed guide, we will walk you through the steps to prepare this delightful dish, from making the batter to preparing the tempering and garnishing. With a few simple ingredients and a bit of patience, you can enjoy the authentic taste of Dhokla at home!

Ingredients:

For the Batter:

  • 1 cup gram flour (besan)
  • 2 tablespoons semolina (rava/sooji)
  • 1 tablespoon sugar
  • 1 teaspoon ginger-green chili paste
  • 1/2 teaspoon turmeric powder
  • 1 tablespoon lemon juice
  • 1 teaspoon eno fruit salt (or baking soda)
  • 3/4 cup water
  • Salt to taste

For Tempering:

  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1-2 green chilies (slit lengthwise)
  • A pinch of asafoetida (hing)
  • 8-10 curry leaves
  • 1 teaspoon sesame seeds (optional)
  • 2 tablespoons water

For Garnishing:

  • Chopped coriander leaves
  • Grated coconut (optional)

Instructions:

Step 1: Prepare the Batter

To start, take a mixing bowl and combine gram flour, semolina, sugar, turmeric powder, and salt. These ingredients form the base of your Dhokla batter.

  1. Add ginger-green chili paste, lemon juice, and water. Stir the mixture well to create a smooth batter free of lumps. Make sure the batter has a consistency similar to a pancake batter—neither too thick nor too runny.
  2. Let the batter rest for 10-15 minutes. This resting period allows the semolina to absorb the liquids and helps in making the Dhokla fluffier.

Step 2: Steam the Dhokla

  1. In the meantime, prepare your steamer or large pot with water and bring it to a boil. If you’re using a steamer, ensure it’s properly set up and ready to go.
  2. Grease a round plate or thali with a little oil to prevent the Dhokla from sticking once steamed.
  3. Just before steaming, add eno fruit salt to the batter. Mix the batter gently in one direction. This is a crucial step that will help your Dhokla rise and become airy. Once you mix in the eno, the batter should begin to froth up.
  4. Immediately pour the batter into the greased plate and place it into the steamer. Cover the steamer and steam the Dhokla for 15-20 minutes on medium heat. To check if it’s done, insert a toothpick into the center of the Dhokla. If it comes out clean, it’s ready.
  5. Once the Dhokla is steamed, remove the plate from the steamer and let it cool slightly. Then, cut it into squares or diamond-shaped pieces, depending on your preference.

Step 3: Prepare the Tempering

  1. Heat oil in a small pan. Once the oil is hot, add mustard seeds and let them splutter, which indicates that the tempering is ready.
  2. Add green chilies, asafoetida (hing), curry leaves, and sesame seeds (optional). Sauté the mixture for a few seconds to infuse the oil with these aromatic flavors.
  3. Add 2 tablespoons of water to the pan and let it simmer for a few seconds, allowing the tempering to blend together.
  4. Pour the prepared tempering evenly over the steamed Dhokla. This step infuses the Dhokla with an additional layer of flavor and spice.

Step 4: Garnishing and Serving

  1. Finally, garnish your Dhokla with freshly chopped coriander leaves and grated coconut (optional). The coconut adds a nice texture and sweetness to balance the savory flavors.
  2. Serve the Dhokla warm with your favorite chutneys—green chutney or tamarind chutney—for a burst of tangy goodness. Enjoy!

Tips for Perfect Gujarati Dhokla:

  • Ensure that the batter is free of lumps before adding eno fruit salt, as lumps can affect the texture.
  • Resting the batter is important for the semolina to soak up the liquid, which helps in making the Dhokla soft and fluffy.
  • If you don’t have eno fruit salt, you can use baking soda, but eno gives the Dhokla a better texture.
  • Steam the Dhokla on medium heat to prevent it from becoming dense.
