Lemon Rice Recipe

Ingredients

For the Rice Base:

  • 2 cups cooked rice – cooled and fluffy

  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 2 dried red chilies
  • 1 green chili – finely chopped
  • 1 sprig curry leaves
  • 1 tablespoon urad dal – optional
  • 1 tablespoon chana dal – optional
  • 1/4 teaspoon turmeric powder
  • A pinch of asafoetida (hing)

Garnish:

  • 2 tablespoons coriander leaves – finely chopped
  • 2 tablespoons roasted peanuts or cashews – for crunch

Instructions

Step 1: Prepare the Rice

  1. Cook 1 cup of rice with 2 cups of water until tender. Allow it to cool completely.
  2. Fluff the rice with a fork to separate the grains.

Step 2: Make the Tempering

  1. Heat oil in a pan on medium heat.
  2. Add mustard seeds and let them splutter.
  3. Add cumin seeds, dried red chilies, green chili, curry leaves, urad dal, and chana dal.
  4. Sauté until the dals turn golden and the spices release their aroma.
  5. Stir in turmeric powder and a pinch of asafoetida. Mix well.

Step 3: Combine Rice and Lemon Juice

  1. Add the cooked rice to the pan with the tempering.
  2. Gently mix so the rice is evenly coated with the spices.
  3. Turn off the heat and add freshly squeezed lemon juice and salt.
  4. Mix thoroughly but carefully to avoid breaking the rice grains.

Step 4: Garnish and Serve

  1. Garnish the lemon rice with chopped coriander leaves and roasted peanuts or cashews.
  2. Serve warm or at room temperature with coconut chutney, papad, or a side of pickle.
