- 1/4 teaspoon turmeric powder
- A pinch of asafoetida (hing)

- 2 tablespoons coriander leaves – finely chopped
- 2 tablespoons roasted peanuts or cashews – for crunch
Instructions
Step 1: Prepare the Rice
- Cook 1 cup of rice with 2 cups of water until tender. Allow it to cool completely.
- Fluff the rice with a fork to separate the grains.
Step 2: Make the Tempering
- Heat oil in a pan on medium heat.
- Add mustard seeds and let them splutter.
- Add cumin seeds, dried red chilies, green chili, curry leaves, urad dal, and chana dal.
- Sauté until the dals turn golden and the spices release their aroma.
- Stir in turmeric powder and a pinch of asafoetida. Mix well.
Step 3: Combine Rice and Lemon Juice
- Add the cooked rice to the pan with the tempering.
- Gently mix so the rice is evenly coated with the spices.
- Turn off the heat and add freshly squeezed lemon juice and salt.
- Mix thoroughly but carefully to avoid breaking the rice grains.

- Garnish the lemon rice with chopped coriander leaves and roasted peanuts or cashews.
