  • 2 medium potatoes, boiled, peeled, and cut into bite-sized chunks
  • 1 medium onion, finely chopped
  • 2 medium tomatoes, chopped (or 1/2 can chopped tomatoes)
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • 1/2 tsp red chili powder (adjust to taste)
  • Salt, to taste
  • 2 tbsp oil
  • Fresh coriander leaves, chopped (for garnish)
  • Water, as needed

Step-by-Step Instructions

1. Prepare the Base:
Heat oil in a deep pan. Add cumin seeds and let them sizzle. Toss in the chopped onions and sauté until golden brown.

2. Add Tomatoes and Spices:
Stir in the tomatoes, turmeric, coriander powder, chili powder, and a pinch of salt. Cook until the tomatoes break down and the oil begins to separate.

3. Add Mushrooms and Potatoes:
Now add the mushrooms and cook for 4–5 minutes until they begin to soften. Then add the boiled potatoes and gently mix everything together.

4. Simmer and Finish:
Add a splash of water to get the desired consistency. Cover and simmer for another 5–7 minutes, allowing the flavors to meld. Sprinkle in the garam masala and give it a final stir.

5. Garnish and Serve:
Turn off the heat, garnish with chopped coriander, and serve hot.
