Poha, a popular Indian breakfast dish, is made from flattened rice and is known for its light yet satisfying texture. It is easy to prepare, packed with flavors, and can be customized with various vegetables and spices. Originating from Maharashtra and Madhya Pradesh, poha is now loved across India, with different regions adding their own twist.

In this blog, we will explore the classic poha recipe, along with variations, tips, and serving suggestions to make your poha perfect every time.

Ingredients for Classic Kanda Poha (Serves 2-3 people)

Main Ingredients:

  • 2 cups poha (flattened rice)
  • 1 medium onion (finely chopped)
  • 1 small potato (chopped, optional)
  • 1 small tomato (chopped, optional)
  • 2 green chilies (finely chopped)
  • ½ cup peanuts
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds (optional)
  • 8-10 curry leaves
  • 1 tsp turmeric powder
  • ½ tsp salt (or as per taste)
  • ½ tsp sugar (optional)
  • 1 tbsp lemon juice
  • 2 tbsp coriander leaves (chopped)
  • 2 tbsp oil or ghee

For Garnishing:

  • 2 tbsp grated coconut (optional)
  • Sev (thin fried gram flour noodles)

Step-by-Step Instructions

Step 1: Prepare the Poha

  1. Take 2 cups of poha in a colander and rinse it under running water for a few seconds.
  2. Let it sit for 5 minutes to absorb water and soften.
  3. Fluff it gently with a fork to prevent it from becoming mushy.
  4. Add salt, sugar, and turmeric powder to the poha and mix well.

Step 2: Prepare the Tempering

  1. Heat 2 tbsp oil in a pan.
  2. Add mustard seeds and let them splutter.
  3. Add peanuts and fry until crispy.
  4. Add cumin seeds, green chilies, and curry leaves. Sauté for a few seconds.
  5. Add chopped onions and cook until they turn translucent.

Step 3: Add Potatoes and Cook (Optional step if using potatoes)

  1. Add chopped potatoes and stir-fry for 3-4 minutes.
  2. If using tomatoes, add them at this stage and cook until soft.

Step 4: Mix in Poha

  1. Lower the heat and add the prepared poha to the pan.
  2. Stir gently to mix everything well without breaking the poha.
  3. Cover and let it cook on low heat for 2-3 minutes.

Step 5: Final Touch

  1. Add lemon juice and coriander leaves. Mix well.
  2. Garnish with grated coconut and sev for extra crunch.

Step 6: Serve and Enjoy!

  • Serve hot with tea or coffee for a perfect breakfast.

Variations of Poha

1. Kanda Poha (Onion Poha)

  • The most popular version, made with onions and tempered with mustard seeds and curry leaves.

2. Batata Poha (Potato Poha)

  • Includes diced potatoes for an extra filling meal.

3. Indori Poha

  • A famous variation from Madhya Pradesh, served with fennel seeds, topped with sev, and sometimes with jalebi on the side!

4. Vegetable Poha (Healthier version)

  • Add vegetables like peas, carrots, capsicum, and beans for extra nutrition.

5. Masala Poha

  • Includes garam masala, red chili powder, and other spices for a spicier taste.

6. Maharashtrian Poha with Coconut

  • Uses grated coconut for a mildly sweet and rich flavor.

Tips for the Perfect Poha

✅ Use thick poha, as thin poha can become soggy when washed.
✅ Do not over-soak—just rinse and let it sit to absorb moisture.
✅ Adjust spice levels based on your preference.
✅ Adding peanuts gives a crunchy texture to contrast the softness of poha.
✅ Garnish with sev and coconut to enhance the flavor.
✅ Serve hot for the best taste and texture.
