How to Make Dal Baati Churma
Step 1: Prepare the Dal
- Rinse all dals thoroughly and pressure cook them with a pinch of turmeric, salt, and 3 cups of water for 4–5 whistles. Once done, mash them lightly.
- Heat ghee in a pan. Add cloves, bay leaf, cumin seeds, green chili, and hing. Let it splutter.
- Add onions and garlic; sauté until onions turn golden. Then add tomatoes, chili powder, turmeric, coriander powder, and garam masala. Cook until the tomatoes soften.
- Add the mashed dal, mix well, and let it simmer for 5 minutes. Adjust the consistency with water if needed. Garnish with coriander leaves.
Step 2: Make the Baati
- Mix all the ingredients for baati and knead a stiff dough.
- Divide into small balls and flatten slightly, pressing your thumb to make an indentation in the center.
- Bake in a preheated oven at 180°C for 25–30 minutes or until golden. Alternatively, deep fry in ghee for a richer flavor. Brush with ghee while still hot.
Step 3: Prepare the Churma
- Combine wheat flour, semolina, and ghee. Add water to make a stiff dough.
- Shape into small patties with an indentation in the center. Deep fry in hot ghee until golden brown.
- Once cooled, crush the fried patties into coarse crumbs using a blender or hand.
- Mix with powdered sugar, cardamom powder, and almond slivers. Add a spoonful of melted ghee for extra richness.
Step 4: Assemble and Serve
- Break the baatis into smaller pieces and place them on a plate. Pour hot dal over them.
- Drizzle with ghee, sprinkle chopped onions, and squeeze some lemon juice on top.
- Serve alongside the sweet churma for a perfect balance of flavors.
