Homegrown millet-made noodles, including ragi, bajra, and jowar, are gaining popularity as a new superfood, highlighting forgotten culinary traditions and their health benefits. Bihar Agricultural University (BAU) in Bhagalpur has innovated “Nutri Tiffin Box” noodles from ragi and jowar, a unique initiative by agricultural scientists.
The Central government’s recognition of traditional millets as ‘superfood’ has sparked interest among food enthusiasts, restaurateurs, and noodle manufacturers to explore fast-food options based on these grains, integral to Indian cuisine. The ragi and jowar noodles will be showcased to Chief Minister Nitish Kumar during the upcoming “Samriddhi Yatra.”
BAU Vice-Chancellor Dr. D.R. Singh advocates for these millet-based noodles as a healthy alternative to mainstream refined flour noodles, emphasizing their nutritional value and market potential. He suggests integrating these nutritious noodles into the mid-day meal program in schools for their health benefits, especially for children, the elderly, and patients.
Dr. Singh highlights the nutritional advantages of millet-made noodles over refined flour products, emphasizing their high fiber and protein content. Plans are in motion to introduce millet-based stalls at Patna Airport and Purnea Airport, pending necessary approvals, to promote these healthier food options.
