This vibrant dish celebrates the Indian flag with natural hues — saffron from carrots, white from traditional idli batter, and green from spinach or capsicum. For Idli Batter:

  • 3 cups idli batter (homemade or store-bought)

  • 1 tsp oil for greasing

  • 1 medium carrot (for saffron)
  • A handful of spinach or ½ green capsicum (for green)
  • Coriander & mint leaves (optional for added flavor)

Step-by-Step Method

  1. Prepare the Veggie Purees:
    • Saffron Layer: Peel, chop, and steam the carrot. Blend it into a smooth puree.
    • Green Layer: Blanch spinach or use raw capsicum. Blend with a few coriander and mint leaves for added freshness.
  2. Divide the Batter:
    • Take 3 equal portions of the idli batter.
    • Mix carrot puree into one portion for saffron.
    • Add spinach or capsicum puree into the second portion for green.
    • Leave the third portion plain for the white layer.
  3. Grease and Layer the Moulds:
    • Grease idli moulds with a little oil.
    • Spoon saffron batter first, followed by white, then the green batter on top. You can use either regular or mini idli moulds.
  4. Steam the Idlis:
    • Steam in a preheated idli steamer for about 10–12 minutes.
    • Once done, let them cool for a minute before demoulding.
  5. Serve Hot:
    • Pair with traditional sambar and tricolour chutneys — coconut (white), tomato (red/orange), and coriander-mint (green) to maintain the theme.
