Paneer Butter Masala: A Simple, Creamy Delight Recipe

Paneer Butter Masala is a rich, creamy, and delicious curry that’s a favorite in Indian restaurants. It’s made with soft paneer (Indian cottage cheese) cooked in a smooth, flavorful tomato-based sauce with butter, cream, and a mix of aromatic spices. It pairs beautifully with naan or rice, making it a comforting meal for any occasion.

Let’s dive into the recipe and make this restaurant-style dish at home in the simplest way possible!

Ingredients

  • Paneer – 250 grams, cut into cubes. You can either buy it from the store or make it fresh at home.
  • Oil – 2 teaspoons, for cooking.
  • Spices – 1 bay leaf, a small cinnamon stick, and 3-4 cloves for extra flavor.
  • Onion – 1 large white onion, chopped. White onions work best for this recipe because of their mild, sweet taste.
  • Garlic & Ginger – 6-7 garlic cloves and a 1.5-inch piece of ginger, finely chopped.
  • Tomatoes – 3-4 large tomatoes, chopped. These will form the base of the curry sauce.
  • Cashews – 10-15 raw cashews. These add richness and creaminess to the sauce.
  • Butter – 2 tablespoons, for that creamy taste.
  • Cream – 3-4 tablespoons, for the perfect texture.
  • Spices for flavor – 1/2 teaspoon red chili powder, 1/2 teaspoon Kashmiri red chili powder (for color), 1/2 teaspoon garam masala, and a pinch of cardamom powder.
  • Sugar – 1 teaspoon, to balance the flavors.
  • Salt – to taste.
  • Kasuri Methi – 1-2 teaspoons of dried fenugreek leaves for a lovely aroma.
  • Cilantro – for garnish.

Instructions

Step 1: Preparing the base sauce

  1. Heat 1 teaspoon of oil in a pan on medium heat. Once the oil is hot, add the bay leaf, cinnamon stick, and cloves. Let them sauté for a few seconds until fragrant.
  2. Add the chopped onions, garlic, and ginger to the pan. Sauté for 2-3 minutes until the onions turn soft and translucent.
  3. Add the chopped tomatoes and cashews. Stir everything together and cook for 2 minutes.
  4. Add 1 cup of water and cover the pan. Let it cook for about 15 minutes on medium heat. This will soften the tomatoes and cashews.

Step 2: Making the curry paste

  1. After 15 minutes, remove the pan from heat and discard the bay leaf, cinnamon stick, and cloves.
  2. Let the mixture cool for a bit before transferring it to a blender. Blend until you get a smooth paste.

Step 3: Cooking the curry

  1. Now, heat 1 teaspoon of oil and 2 tablespoons of butter in the same pan on medium heat.
  2. Once the butter melts, add the red chili powder and Kashmiri red chili powder. Fry it for a few seconds. This step is important to get that vibrant red color in the curry.
  3. Add the smooth curry paste back into the pan. Stir well and cook for 1-2 minutes.
  4. Now, add the garam masala, cardamom powder, sugar, and salt. Mix everything well and cook for another minute.
  5. Pour in the cream and mix again. You should now have a rich, smooth sauce.
  6. Add the paneer cubes to the pan and cook for 2-3 minutes, allowing them to soak in the flavors.

Step 4: Finishing touches

  1. Sprinkle some kasuri methi over the curry and mix gently.
  2. Garnish with fresh cilantro leaves for a burst of freshness.

Tips for the Best Paneer Butter Masala

  • Paneer: If possible, use homemade paneer for a richer taste. If you’re using store-bought paneer, soak it in warm water for 20 minutes to make it softer.
  • Nuts: Cashews make the curry thick and creamy. Be careful not to overdo it—10-15 cashews are perfect for a creamy texture.
  • Butter and Cream: Don’t skip the butter and cream. This dish is known for its indulgent taste, so a little extra butter won’t hurt!
  • Spices: Keep the spices simple to let the flavors shine. Just a little garam masala and cardamom powder will do wonders.
  • Sweetness: A tiny bit of sugar (1 teaspoon) balances the acidity of the tomatoes and enhances the flavor.
