Aloo Mushroom Curry Recipe: A Perfect Vegetarian Delight!

If you’re craving a flavorful vegetarian curry that’s both comforting and easy to prepare, then Aloo Mushroom Curry is the perfect dish for you! Combining tender potatoes and earthy mushrooms in a rich, spiced gravy, this curry will satisfy your taste buds and keep you coming back for more. Ingredients:

  • Potatoes (Aloo) – 2 medium-sized, peeled and cubed
  • Mushrooms – 200g, sliced
  • Onion – 1 large, finely chopped
  • Tomato – 1 large, finely chopped
  • Green chilies – 2, slit
  • Ginger-garlic paste – 1 tbsp
  • Cumin seeds – 1 tsp
  • Turmeric powder – 1/2 tsp
  • Coriander powder – 1 tsp
  • Cumin powder – 1 tsp
  • Garam masala – 1/2 tsp
  • Red chili powder – 1 tsp (adjust to your spice preference)
  • Fresh coriander leaves – For garnish
  • Salt – To taste
  • Oil – 2 tbsp
  • Water – 1 1/2 cups (adjust for desired consistency)

Instructions:

Step 1: Heat the Oil

In a heavy-bottomed pan, heat 2 tablespoons of oil over medium heat. Add 1 teaspoon of cumin seeds and let them splutter. This step infuses the oil with a deep, aromatic flavor.

Step 2: Sauté the Onions and Spices

Once the cumin seeds start to crackle, add 1 finely chopped onion. Sauté until the onions turn golden brown, which will take about 5-7 minutes. Then, add 1 tablespoon of ginger-garlic paste and sauté for another minute until fragrant.

Step 3: Add the Tomatoes and Spice Mix

Now, toss in 1 chopped tomato and cook until it softens and becomes mushy. Stir in the turmeric powder, coriander powder, cumin powder, and red chili powder. Mix everything well, and cook the spices for 2-3 minutes to remove the raw flavor.

Step 4: Add Potatoes and Mushrooms

Next, add the 2 medium-sized potatoes (peeled and cubed) and 200g of sliced mushrooms. Stir everything well so the potatoes and mushrooms are coated in the spices. Cook for about 5 minutes.

Step 5: Add Water and Simmer

Pour in 1 1/2 cups of water and add salt to taste. Stir everything together and cover the pan. Let it cook on low heat for 15-20 minutes, or until the potatoes are tender and the mushrooms release their moisture, which will make the gravy flavorful.

Step 6: Final Touches

Once the potatoes are cooked through, add 1/2 teaspoon of garam masala and stir to combine. Let the curry simmer for another 2-3 minutes to allow the flavors to blend. If the curry is too thick, feel free to add a bit more water to reach your desired consistency.

Step 7: Garnish and Serve

Garnish your Aloo Mushroom Curry with fresh coriander leaves for a burst of color and flavor. Serve it hot with steamed rice, chapati, or your favorite flatbread.

Tips:

  • For a creamier texture, you can add a tablespoon of fresh cream at the end.
  • You can adjust the spice levels based on your preference by adding more or less chili powder.
  • For extra flavor, try adding a pinch of kasuri methi (dried fenugreek leaves) toward the end.
