Urad Dal, also known as black gram lentils, is a staple in Indian households. This protein-rich dish is not only nutritious but also incredibly flavorful, making it a perfect addition to any meal. Whether served with rice or roti, Urad Dal is a comforting dish loved by many.

Ingredients

For the Dal

  • 1 cup whole urad dal (black gram lentils)
  • 3 cups water
  • 1 medium onion (finely chopped)
  • 2 tomatoes (pureed)
  • 1 tbsp ginger-garlic paste
  • 1 green chili (finely chopped)
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1/2 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • Salt to taste
  • 2 tbsp oil or ghee
  • Fresh coriander leaves for garnish
  • Lemon wedges (optional)

Instructions

Preparing the Dal

  1. Wash and soak urad dal in water for at least 4-6 hours or overnight.
  2. Drain the soaked dal and pressure cook with 3 cups of water and a little salt for 3-4 whistles or until soft.

Making the Tadka (Tempering)

  1. Heat oil or ghee in a pan, add cumin seeds and mustard seeds. Let them splutter.
  2. Add chopped onions and sauté until golden brown.
  3. Add ginger-garlic paste and green chili, cook until the raw smell disappears.
  4. Add tomato puree, turmeric powder, red chili powder, and coriander powder. Cook until the oil separates.

Combining the Dal

  1. Add the cooked dal to the pan and mix well.
  2. Simmer for 10-15 minutes, adjusting water to achieve the desired consistency.
  3. Add salt to taste and garnish with fresh coriander leaves.

Serving Suggestions

Urad Dal pairs wonderfully with steamed rice, jeera rice, or chapati. Serve with a side of pickle and papad for a complete meal.

  • Soaking the dal helps in faster cooking and better texture.
  • Use ghee instead of oil for a richer flavor.
  • Adjust the spice levels according to your preference.
  • Squeeze a little lemon juice before serving for a tangy twist.
