  • 1 tablespoon fennel seeds (saunf), crushed

  • 2 tablespoons grated khoya (optional, for richness)
  • Ghee or oil for deep frying

For the Sugar Syrup:

  • ½ cup sugar
  • ¼ cup water
  • 1 teaspoon rose water or cardamom powder
  • A few saffron strands (optional)

For Garnishing:

  • Chopped nuts (almonds, pistachios)
  • Rabri (optional, for serving)

Step-by-Step Recipe to Make Malpua

Step 1: Prepare the Batter

  1. In a mixing bowl, combine flour, semolina, yogurt, crushed fennel seeds, cardamom powder, and khoya.
  2. Gradually add milk while stirring continuously to form a smooth, lump-free batter.
  3. The batter should have a pancake-like consistency – neither too thick nor too runny.
  4. Cover and let it rest for 30-45 minutes to allow the flavors to blend.

Step 2: Make the Sugar Syrup

  1. In a saucepan, add sugar and water. Stir over medium heat until the sugar dissolves.
  2. Add saffron strands and cardamom powder for enhanced flavor.
  3. Let it simmer for 5-7 minutes until it forms a light syrup. It should be slightly sticky but not too thick.
  4. Turn off the heat and add rose water.

Step 3: Fry the Malpua

  1. Heat ghee or oil in a deep pan on medium heat.
  2. Pour a ladleful of batter into the hot ghee, allowing it to spread naturally.
  3. Fry until golden brown on both sides, flipping carefully with a spatula.
  4. Once done, remove and drain excess oil.

Step 4: Dip in Sugar Syrup

  1. Immediately dip the fried Malpua in warm sugar syrup for 30 seconds.
  2. Remove and place on a serving plate.

Step 5: Garnish & Serve

  1. Garnish with chopped nuts.
  2. Serve warm with rabri for an authentic touch.

Baking Option for a Healthier Malpua

If you prefer a less oily version, you can bake Malpua instead of frying:

  1. Preheat the oven to 180°C (350°F).
  2. Grease a baking sheet and pour small portions of batter onto it.
  3. Bake for about 15-20 minutes or until golden brown, flipping halfway through.
  4. Once done, dip in warm sugar syrup and serve.

  • Consistency Matters: The batter should be smooth and flowy but not watery.
  • Crispy or Soft? For crispier Malpua, use more semolina; for softer ones, add more milk.
